Vegetarian Recipe for Tofu with Tomatoes



Ingredients (makes one serving) 

1 8oz piece of extra firm tofu
2 tomatoes
2 garlic cloves
1 tablespoon parsley
4 tablespoons extra virgin olive oil
seal salt and freshly ground pepper 


Directions

Heat oven to 400F, drain tofu so it is dry and rube 1 tablespoon olive oil all over tofu and place in the oven over foil for about 50 minutes or until it's brown and dry but not appear shriveled. Meanwhile, peel garlic, finely chop and add to a mortal, mash garlic until smooth. Add parsley and pinch of salt and mash some more. Add 2 tablespoons olive oil to the mix and blend all together. Place cooked tofu on a dish and add the sauce evenly on top it. Cut the tomatoes into quarters and drizzle remaining olive oil over tomatoes and a pinch of salt and black pepper.
